    ABSTRACT Eicosanoic fatty acids are physiologically active substances who have a variety of functions, all directed towards regulating inflammatory processes and immunologic responses. These inflammatory factors derive commonly from araquinodic acid, a phosfolipid component of the cellular membrane that, when unsterified by a wide variety of enzymes, produces various eicosanoic derived products. It has been proven that omega 3 fatty acids compete with araquidonic acid, situation which derives in the production of less potent eicosanoic derived inflammatory mediators. For this reason these types of fatty acids constitute themselves as anti-inflammatory elements of noticeable importance
